Clark's Salad Bowl, Seattle 1943

This imaginative menu cover of dancing fruit and vegetables was created for Clark’s Salad Bowl by renowned Seattle artist Arthur “Link” Lingenbrink. The Salad Bowl was one of a chain of Clark’s restaurants that dominated Seattle’s food scene for decades. Established by Walter Frederick Clark in 1930, the empire eventually grew to 53 restaurants. This widely respected restaurateur embraced the farm to table ethos that is so popular now, as you can see from the interior where local suppliers and their produce were proudly put on display. Clark's, the largest restaurant chain in Seattle, was bought by the Campbell Soup Company in 1970 for an estimated $4.9 million. But, as Clark said later, "they sent a bunch of soup men to run the restaurant and they didn't do a very good job.''
