In 1897, Mr Baker, from Philadelphia, recognized the potential of coconut as a food source. He and his son travelled to the Philippines to open processing plants that sent this nutrient-rich ingredient back to the United States. The family-run company was eventually bought by the General Foods Corporation. \u003c\/span\u003e\u003cspan style=\"line-height: 1.5;\"\u003eThe artist is unknown in this 1914 illustration but he did a great job in conveying to people who would have been unfamiliar with the shape and taste of coconuts. that there was nothing to be afraid of.
