According to Alice Monfort Dunn, the owner's daughter, who lived in the hotel with her aunt in the 1880s, political conventions were often held there, with Republicans staying in one wing of the hotel and Democrats staying in the other. The hotel's dining room, with stained glass windows and a choice of open tables or curtained booths, was busy day and night, she said, with vast quantities of food served for 75 cents per person. It was all thanks to American engineer and industrialist George Pullman who, after spending an uncomfortable night sleeping upright during a train journey, was convinced passengers would pay for better amenities. He established his company in Chicago in 1867. Passengers could rest in sleeping cars and eat in dining cars decorated with chandeliers and leather banquettes as trains sped from city to city. It must have been a delightful way to travel. Freshly prepared gourmet meals were served by uniformed waiters and champagne, liquor and beer were served - though Prohibition laws in many states restricted when these beverages could be served. The building cost $69,000 to construct and was completed in 1879. The grand 24 roomed hotel played host to banquets for William \"Buffalo Bill\" Cody as well as President Grover Cleveland in 1888. In the golden era of menu design, many foods were made to look human. They were given faces by talented illustrators and dressed up – this egg has a hat and a cane. Chicago's famed Bismarck hotel was opened in 1894 by German immigrants Emil and Karl Eitel and for many decades, businessmen and lawyers conducted their affairs over breakfasts of steak, eggs and coffee in the hotel's elegant Walnut Room. The Eitel family sold the Bismarck in 1956 and it went through several other owners before eventually closing in 1996. As always in this era, Chinese restaurants served American and Chinese food to cater to all tastes. Henrici’s was founded in Chicago in 1868 and this legendary restaurant survived for nearly a hundred years before being closed and demolished in 1962. There was a marble-tiled open-air dance floor and bandshell, known as The Beach Walk, which faced Lake Michigan. This is where this 1947 menu comes from.\u003cbr\u003e\u003cbr\u003eElegantly dressed guests spent spring and summer evenings here in the open air, drinking gin rickeys or bourbon highballs and dancing to the music of famous bandleaders such as Tommy Dorsey, Xavier Cugat and Glenn Miller. In the winter months, when Chicago fully lived up to its Windy City reputation and temperatures plunged, entertainment was provided indoors. Access to the hotel’s private beach on the lake was cut off in the 1950s and the hotel began to face competition from other big hotels.\u003cbr\u003e\u003cbr\u003eIn 1963, the National Conference on Race and Religion was held at the hotel and Martin Luther King Jnr gave a major address to the audience. A statement in support of civil rights by President John F Kennedy was read out. The hotel closed in 1967 and went into bankruptcy. Demolition of the hotel was completed in 1970. There was a marble-tiled open-air dance floor and bandshell, known as The Beach Walk, which faced Lake Michigan.\u003c\/p\u003e\n\u003cp\u003eElegantly dressed guests spent spring and summer evenings here in the open air, drinking gin rickeys or bourbon highballs and dancing to the music of famous bandleaders such as Tommy Dorsey, Xavier Cugat and Glenn Miller. In the winter months, when Chicago fully lived up to its Windy City reputation and temperatures plunged, entertainment was provided indoors.\u003c\/p\u003e\n\u003cp\u003eThis 1961 menu is from the Yacht Club, one of the resort’s restaurant and cocktail bars. Not surprisingly, the establishment had a nautical theme and served seafood flown in from Rockland, Maine.\u003c\/p\u003e\n\u003cp\u003eAccess to the hotel’s private beach on the lake was cut off in the 1950s so we’re assuming this was a yacht club in name only but patronized by Chicagoans who enjoyed cruising about in small boats on the lake.\u003c\/p\u003e\n\u003cp\u003eAs the Edgewater began to face competition from other big hotels, it lost its allure and the hotel closed in 1967, going into bankruptcy. Demolition of the hotel was completed in 1970. And, lest anyone think this was an unauthorized copycat – it was made clear that the location was ‘created and personally supervised by Trader Vic – Victor Jules Bergeron jnr who founded the Polynesian-themed restaurant chain in Oakland, CA.\u003cbr\u003eFrom old photographs, it must have been fun to walk off the chilly streets of Chicago and enter a South Seas paradise on the lower level of the hotel, owned by Hilton.\u003cbr\u003eTikis guarded the thatched entrance to Traders and once down the stairs, customers found themselves amid a castaway vibe with ornate wicker chairs, tapa cloth wall hangings, fish floats and fishing nets hanging from the ceiling and puffer fish lamps on wooden tables. There were tikis galore including a huge tiki carved by Barney West (1919-1981) the talented tiki wood carver from Seattle, whose work was in huge demand during the midcentury era of Polynesian pop. Drinks were highly decorated and heavy on the rum, and the food included barbecued meats, Chinese dishes and curries.\u003cbr\u003eAt some point, The Traders renamed Trader Vic’s and endured until 2005 at Palmer House, which is now owned by Hilton. The hotel, established in East Monroe Street in 1873 after the original burnt down, has other claims to fame. As noted on the cover, the establishment offered ‘gracious dining without extravagance,’ and was a go-to place for special occasions like birthdays and anniversaries.\u003c\/p\u003e\n\u003cp\u003eMuch to Harry’s dismay, however, the Red Fox gained notoriety as the place where former Teamsters president Jimmy Hoffa was last seen.\u003c\/p\u003e\n\u003cp\u003eOn the afternoon of his disappearance on July 30, 1975, Hoffa arrived at the Machus Red Fox for a 2pm meeting with alleged Detroit mob enforcer Anthony ‘Tony Jack’ Giacalone and New Jersey mob figure Anthony ‘Tony Pro’ Provenzano.\u003c\/p\u003e\n\u003cp\u003eThe mob figures never turned up and Hoffa phoned his wife to say he would be home by 4pm. Some witnesses saw him waiting in the parking lot before a maroon car, a Mercury Marquis, arrived with several men inside. Hoffa got in and was never seen again.\u003c\/p\u003e\n\u003cp\u003eThe car was traced to Giacalone’s son, and a strand of Hoffa’s hair was found in the car. Despite extensive investigations, the riddle of the trade unionist, said to have become involved with organized crime, remained unsolved. His body was never found and Hoffa was declared dead in absentia in 1982.\u003c\/p\u003e\n\u003cp\u003eThe notoriety attached to Machus Red Fox displeased the respected restaurateur but there was nothing he could do about it.\u003c\/p\u003e\n\u003cp\u003e‘It just drove him nuts,’ said Harry’s son, Robert. ‘He thought people would think he was running a place for gangsters. ‘My father was a very old-fashioned, very focused, very straitlaced kind of guy.’\u003c\/p\u003e\n\u003cp\u003eThe restaurant continued business until 1996 and was replaced by a steakhouse.\u003c\/p\u003e\n\u003cp\u003eHarry was president of the National Restaurant Association for ten years  as well as president of the Birmingham Chamber of Commerce. He also received the First Citizen of Birmingham Award. The company also operated hotels in multiple other US states. \u003c\/p\u003e\n\u003cp\u003eThis menu cover was created for guests staying at the Naniboujou Superior Lodge on the north shore of Lake Superior, the jewel in the hotel chain’s crown.\u003c\/p\u003e\n\u003cp\u003eOnce an ultra-exclusive private club for the wealthy that went bust during the Depression, it was bought out of bankruptcy by Roberts in 1939, and he operated the facility as a hotel.\u003c\/p\u003e\n\u003cp\u003eGuests ate in the lavishly decorated dining room, with Cree Indian designs painted on the walls. The dining room also had the largest stone fireplace in the state of Minnesota, standing 20ft high and made with 200 tons of native rock.\u003c\/p\u003e\n\u003cp\u003eActivities offered included archery, croquet, badminton, lawn tennis, trap and skeet shooting, swimming and canoeing.\u003c\/p\u003e\n\u003cp\u003eAfter Roberts died in 1953, Naniboujou was bought by a series of new owners and is still open part of the year.\u003c\/p\u003e\n\u003cp\u003eWe believe this map was created by the accomplished artist Martin Fowler (1912-1998).\u003c\/p\u003e\n\u003cp\u003eMartin Fowler was born in Schenectady, NY. In 1931, he won a scholarship to the Pratt Institute in New York City and graduated in 1934 with a degree in commercial art. It started out as a tavern in the 1820s growing into a luxury 600 room hotel which played host to at least fifteen Presidents including Andrew Jackson, Abraham Lincoln, William McKinley, William Howard Taft, Warren G. Harding and Theodore Roosevelt. Other notable guests over the years included Charles Dickens, Oscar Wilde, Amelia Earhart and Eleanor Roosevelt.
