The prices suggest that it's from the 1940s but the menu cover seems much more modern. With a $200 investment, they opened a food stand where costumed waitresses scooped up warm potato chips from a chute and passed the steaming-hot bags through a glass window to customers. The family opened its first coffee shop several years later and sold pastries and locally-made salted coconut macaroons. The business was expanded to a bakery in 1921 and a picturesque blue and white windmill was placed outside the building, becoming the company’s trademark. During World War 1, due to the scarcity of white flour, the Van de Kamps invented a whole-grain bread that was way ahead of its time.\u003cbr\u003eWaitresses were taught to chant: “Oatmeal, corn and rye – sock the Kaiser in the eye.” By 1928, the company had 53 bakeries and coffee shops all over Los Angeles. In 1930, the family built a headquarters in Glassell Park, designed by architect J. Edwin Hopkins to resemble a 16th century Dutch farmhouse. The service ran between Chicago and Los Angeles and a journey took 80 hours and 50 minutes and required 15 locomotive changes.\u003c\/p\u003e\n\u003cp\u003eBut don’t be too sorry for the passengers – their journeys were completed in luxurious surroundings. There were sumptuous private sleeping quarters in Pullman cars, opulent passenger lounges and, as evidenced by this menu, a fine on-board restaurant. Later trains on this line were equipped with air conditioning, shower-baths and the services of a barber and a beautician.\u003c\/p\u003e\n\u003cp\u003eThe California Limited made its first run on November 27, 1892, and food service was by the famous Fred Harvey Company.\u003c\/p\u003e\n\u003cp\u003eEnglish-born entrepreneur Fred Harvey founded his business in 1875 to cater to the growing number of Americans traveling by train. He opened eating houses along the Santa Fe line and other railroads, staffing them with ‘Harvey Girls.’\u003c\/p\u003e\n\u003cp\u003eThese were women aged between 18 and 30 who resided in housing adjacent to the restaurants and were supervised by a Senior Girl, who enforced curfews and chaperoned male visitors. Roughly 5,000 Harvey Girls moved out West, many of them marrying and having families.\u003c\/p\u003e\n\u003cp\u003eFred Harvey expanded into restaurants, on-board catering, souvenir shops and hotels and is regarded as America’s first hospitality chain.\u003c\/p\u003e\n\u003cp\u003eThe California Limited was withdrawn from service in 1954, giving it the longest tenure of any train on the Chicago-Los Angeles run of the Santa Fe. The 20-are property, which had 165 rooms, an Olympic-sized swimming pool, tennis courts and stables the Coachella Valley’s first golf course, sunk into debt after the 1929 Stock Market crash and was sold at auction three years later for the ‘enormous’ sum of $300,000.\u003c\/p\u003e\n\u003cp\u003eIn 1942, when America entered World War II, the hotel was purchased by the Army and converted into a 1600-bed hospital. The small Desert Hospital also opened on its grounds.\u003c\/p\u003e\n\u003cp\u003eIn the 1950s and 60s El Mirador became a hotel again – we think this menu is from that era.\u003c\/p\u003e\n\u003cp\u003eIn 1972, Desert Hospital bought the entire property, which is now the campus of Desert Regional Medical Center.\u003c\/p\u003e\n\u003cp\u003eThe iconic Spanish-Colonial revival-style El Mirador Tower – the name means Lookout – survived these changes and was added to the National Register of Historic Places. With tourists returning and many military men still stationed there, this restaurant is likely to have been a popular hangout. We don’t know anything about the owner- except that his name was Rusty and that he had an off-beat sense of humor.\u003cbr\u003eThere are many jokes on the menu – typical of the era - and the Tahitian name was probably a reference to early tiki culture that would become a full-blown craze in the 1950s and 1960s. This menu mentions OPS (Office of Price Standards) the regulated prices to stop inflation during wartime. You can practically smell the sea thanks to the artist Virginia Blair.\u003cbr\u003eWe know that Lou’s Fish Grotto opened in 1946, specializing in Devil Crab and Abalone dinners, and that it had beautiful views of the Bay, with its playful seal lions and many fishing and pleasure boats.\u003cbr\u003eThe restaurant also had a cocktail lounge with sparkling views of the marina.\u003cbr\u003eWe believe this menu is from the late 1940s since there is an attached note inside saying ‘In compliance with the President’s order, rolls and butter will be served only upon request.’\u003cbr\u003eThis would have been President Roosevelt who created the Office of Price Administration (OPA) in 1941. Americans had ration books by 1942 and learned to live with meager supplies of items such as butter, sugar, milk and gasoline to help the war effort.\u003cbr\u003eWe don’t know Lou’s surname yet, but we do know his family was in the fishing business long before he opened a restaurant. None of them lasted, except for the one on Shelter Island.\u003c\/p\u003e\n\u003cp\u003eAn accountant by profession, Tom Ham took on the struggling bar and restaurant in 1954 and, without any experience of running a restaurant, turned it into a vibrant success. He renamed it Bali Hai – it means ‘your own special island.’ Since then, three generations of the Ham family have presided over Bali Hai, which has been lovingly preserved and undergone multiple improvements.
